Tabouleh / Parsley Salad

Ingredients:
1. Fresh Curly Parsley - 150 gm (finely chopped)
2. Bulgur / Cracked wheat  - 1 cup
3. Tomato - 3 large (finely chopped)
4. Lemon juice - 1/4 cup
5. Olive oil - 5 tbsp
6. Boiled water - 1 cup
7. Ground Black Pepper - 1/8 tsp
8. Salt to taste

Preparation:
1. In a bowl, add 1 cup of bulgur to 1 cup of boiled water and mix. Keep covered so the steam is unable to escape. Set aside until cool
2. Place the chopped parsley and tomatoes in a large salad bowl
3. Pour the fresh lemon juice over the salad mixture
4. Add olive oil, ground pepper and salt. Mix well
5. Add the cool bulgur and mix well
6. Serve
