Beetroot Chapathi

Ingredients:
1. Beetroot - 1 (medium sized)
2. Wheat Flour/Atta - 2 cups
3. Salt to taste
4. Water as needed
5. Oil/Ghee - 2 tbsp
Preparation:
1. Clean the beetroot and peel off the skin. Cut it into small sized pieces
2. Cook with some water for 5-6 minutes. Drain any water and keep to cool. Do not throw the water. You can use it for mixing the dough
3. In a blender, blend the beetroot to a smooth paste
4. Mix the beetroot paste with the atta. Add water as required and knead well to form a soft dough. Let it rest covered for at least 30 mins
5. Divide the dough into 10-12 equal portions
6. Roll them to  medium sized chapathis
7. Heat tawa, add the rolled chapathi and cook on both sides until golden spots appear
8. Brush oil/ghee on both sides (optional)
Serve hot with any curry of your choice or curd
