Kinnathappam / Rice Cake - Kerala Dish


 Ingredients:
1. Raw rice - 1 cup (soaked in water for 3-4 hrs or overnight)
  or Rice Flour - 1 cup
2. Coconut milk - 1 3/4 cups
3. Sugar - 1/2 cup or 1 cup (depending on your taste)
4. Cumin seeds - 1 tbsp
5. Ghee - 1-2 tbsp
6. Salt - A pinch

Preparation:
1. Strain the soaked rice and grind it to a smooth batter
2. Add in coconut milk, sugar and mix well
3. Put cumin seeds and salt to the batter
4. The batter should be too thick or too watery.
5. If the batter is too thick, add in some water or thin coconut milk to thin it down
6. Grease a stainless steel plate or cake pan with ghee.
7. Pour the batter and steam cook for 15-20 minutes on medium heat or until a fork inserted comes out clean
This can be served either cold or warm

Note: If you are using rice flour, mix the coconut milk, sugar, cumin seeds and salt to form the batter.
This can also be made in idli moulds
