Cucumber Pachadi / Vellarika Pachadi

Ingredients:
1. Cucumber - 2 (peeled and diced into cubes)
2. Fresh thick plain Yogurt/Curd - 2 cups
3. Grated coconut - 3 tbsp
4. Green chilli - 2
5. Mustard seeds - 1/2 tsp
6. Dry red Chilli - 2
7. Curry leaves - 1 sprig
8. Salt to taste
9. Oil - 1 tbsp

Preparation:
1. Mix the cucumber with salt and keep aside
2. Grind coconut and green chilli without water to form a coarse paste
3. Add the coconut paste to the yogurt and whisk well until smooth
4. Put the cucumber to the yogurt mixture and mix well
5. Heat oil in a pan. Splutter mustard seeds, dry red chilli and curry leaves. Add this to the cucumber pachadi
Serve chilled
