Mayo Chicken Salad

Ingredients:
1. Chicken breasts - 2 lb (skinless and boneless)
2. Mayo/Mayonnaise - 3 tbsp
3. Lettuce leaf - 3-4 (chopped)
4. Curly Parsley - A handful (chopped)
5. Celery Stalk - 1 (chopped)
6. Lemon juice - 1 tbsp
7. Chopped Spring onion - 1/4 cup
8. Crushed pepper - 1 tsp
9. Salt to taste

Preparation:
1. In a pot cook the chicken breast with water and little salt.
2. Remove the chicken breasts from water and let it cool, Drain on a paper towel
3. Shred all chicken into bite sized pieces using a 2 forks
4. In a bowl combine the shredded chicken with all the other ingredients
5. Refrigerate and serve
