Chicken Fried Rice

Ingredients:
1. Basmati rice (long grain) - 3 cups
2. Boneless Chicken - 1/2 lb
3. Egg - 2
4. Soya Sauce - 2 tsp
5. Pepper powder - 1/2 tsp
6. Onion - 1/2 cup (chopped)
7. Chopped vegetables - 1 cup
    (here i have used carrots, green peas, broccoli, cauliflower) - i used frozen green peas
8. Salt to taste
9. Lime juice - 1 tsp
10. Olive oil - 2 tbsp
11. Tomato Sauce - 1 tbsp
12. Chilli Sauce - 1 tbsp

Preparation:
1. Soak the basmati rice in some water for 1/2 hour. Drain the rice and allow it to dry. In a vessel, add rice, salt and fry for sometime till rice becomes lightly brittle. Add 3 cup of boiling water and cook till the water have been absorbed. Rice will be 99% cooked now. Switch off the flame and leave the rice covered for 5 minutes. It will get fully cooked from heat. Keep aside till use
2. Cut the chicken into bite size pieces. Marinate chicken pieces with lime juice and pepper powder for 10 minutes
3. Heat olive oil in a pan and stir fry the marinated chicken till it turns white and cooked through. 
4. In the same pan add onions and stir fry for a minute. Then add the carrots and fry for two minutes. Finally add the green peas, cauliflower, broccoli and stir fry for 2 more minutes. Keep this aside
5. In a hot pan, add little oil and add eggs. Cook and scramble the eggs ((do not scramble more, the moist should remain)
6. Now add the chicken vegetables and scrambled eggs to the rice and mix well.
7. Put soya sauce, chilli sauce, tomato sauce and pepper powder to the rice and fry rice for 1 more minute
Serve hot with sauce of your choice
