Dahi Vada / Curd Vada

Ingredients:

For Vada :
1. Urad Daal - 1 cup
2. Oil - 2 cups
3. Salt to taste

For Dahi:
1. Dahi / Curd / Yoghurt - 1 kg
2. Shallots (small onions) - 6 (thinly chopped)
3. Mustard seeds - 1/2 tsp
4. Cumin seeds - 1/4 tsp
5. Fenugreek seeds - A pinch
6. Dry red chillis - 6
7. Urad daal - 1/4 tsp
8. Curry leaves - 1 sprig
9. Salt to taste
10. Oil - 1 1/2 tbspn

Method:

For Vada:
1. Clean, wash and soak the daal overnight
2. Grind it into smooth paste
3. Add salt to taste
4. Heat oil in a deep pan and drop a spoonfuls of batter and fry till golden brown
5. Take the hot vadas and put in cold water for 2-3 minutes
6. Now take them out of water, squeeze the water and keep aside

For Dahi:
1. Blend the curd and little water until it is smooth
2. Keep in refrigerator for an hour to get chilled

3. Heat oil in a pan
4. Splutter mustard seeds, fenugreek seeds, cumin seeds, urad daal, dry red chillies
5. Add curry leaves
6. Saute onions until translucent
7. Turn off the flame, add the curd and mix well

Serving:
 In a dish arrange vada and pour dahi on them
Serve the dahi vadas chilled
