Chilli Padavalanga / Chilli Snake Gourd

Ingredients:
1. Snake Gourd - 2 (medium)
2. Green Chilli - 4 (thinly chopped)
3. Garlic cloves - 10 (chopped)
4. Ginger - 1 inch piece (chopped)
5. Onion - 1 (big - chopped )
6. Soy Sauce - 2 tsp
7. Chilli Sauce - 1 tbsp
8. Tomato Sauce - 1 tbsp
9. All Purpose Flour/Maida - 3 tbsp
10. Chilli Powder - 1 tsp
11. Pepper powder - 1 tbsp
12. Salt to taste
13. Oil for frying
14. Coriander leaves to garnish
15. Bell Peppers (green, red, yellow) - 1/2 cup

Preparation:
1. Wash and peel the skin of snake gourd. Remove the seeds and cut it into thin circles
2. Make a thick batter of maida by adding sufficeint water. Add salt and chilli powder to it
3. Heat oil in a deep kadai/wok
4. Dip the snake gourd in the batter and deep fry in oil until it becomes crispy and keep aside in paper towel.
5. Heat little oil in a pan. Add ginger, garlic, green chillies and saute till the raw smell goes off.
6. Add the chopped onions and saute till it turns translucent
7. Reduce the flame and add soya sauce, chilli sauce, tomato sauce, pepper powder, bell peppers, mix well and cook for 1 minute
8. Put the fried snake gourd and mix well till everything is combined
9. Add salt if required and transfer to serving dish
10. Garnish with coriander leaves
Serve hot with roti or chapathi
