Ingredients:
1. Fresh Vegetables - 1 1/2 cup (chopped lengthwise)
- Raw Plantain, Carrot, French Beans, Elephant Yam, Snake Gourd, Ash Gourd
(You can use drumsticks also, i have not used it here as i dint get it)
2. Grated Coconut - 1/2 cup
3. Curry leaves - 1 sprig
4. Cumin seeds - 1/4 tsp
5. Green chillies - 3
6. Turmeric powder - 1 tsp
7. Curd/Yogurt - 1 cup
8. Shallot/Small onions - 4
9. Coconut oil - 1.5 tbsp
10. Salt to taste
Preparation:
1. Cook the vegetables by adding salt and turmeric powder. Do not over cook them. Drain away any water left after cooking the vegetables
2. In a blender, make a coarse paste of grated coconut, cumin seeds, shallots, green chillies and curry leaves.
3. Add this paste to the cooked vegetables and cook for 2 minutes
4. Low the flame and add the curd/yogurt, mix well and turn off the flame immediately
5. Add coconut oil and give a good mix again
Serve hot with plain rice
