Ingredients:
1. Mustard seeds - 1 tsp
2. Cumin seeds - 1/2 tsp
3. Green chilli - 2
4. Red chilli powder - 1 tsp
5. Turmeric powder - 1/2 tsp
6. Onion - 1 (small - thinly chopped)
7. Tomato - 1 cup (chopped)
8. Green spinach / Palak - 2 cups (chopped)
9. Oil - 1 tbsp
10. Salt to taste
11. Curry leaves - 1 sprig
12. Cumin seed powder - A pinch
13. Grated coconut - 2 tbsp (optional)
Preparation:
1. Heat oil in a pan
2. Splutter mustard seeds n cumin seeds
3. Add chopped onion, green chillies and saute well till it turns translucent
4. Add the chopped tomatoes and cook well.
5. When the tomatoes gets smashy and cooked, add salt, turmeric powder, cumin seed powder, red chilli powder and corainder powder and cook for 1 minute
6. Add grated coconut (optional)
7. Add curry leaves and mix
8. Finally add the chopped palak / spinach, mix and keep covered on low flame for 5 -10 minutes till the palak gets cooked
9. Serve hot with plain rice or chappati
