Tomato Curry in thick coconut milk / Thakkali Curry

Ingredients:
1. Tomato - 3  (chopped)
2. Green chilli - 2 (cut into slit)
3. Onion - 1 (chopped)
4. Dry Red Chilli - 2
5. Red Chilli powder - 1/2 tsp
6. Turmeric powder - 1/4 tsp
7. Mustard seeds - 1/2 tsp
8. Thick Coconut milk - 1/2 cup
9. Curry leaves - 1 sprig
10. Coconut oil - 1 tbsp
11. Salt to taste

Preparation:
1. Heat coconut oil in a pan. Splutter mustard seeds, dry red chilies and curry leaves
2. Add Onions and saute till they turn translucent and add green chilli to it and again saute for 1 minute
3. Add tomatoes and saute well
4. Now put the red chilli powder, turmeric powder and salt and cook for 1 minute
5. Add the coconut milk and stir for 3 minutes
Serve hot
