Ghee Rice / Neychoru

Ingredients:
1. Basmati Rice - 1 cup
2. Water - 1 cup
3. Ghee - 2 tsp
4. Salt to taste
5. Cilantro to garnish
  Whole Spices
1. Cinnamon  - 2 sticks
2. Cardamon pods - 2
3. Star Anise - 2
4. Bay Leaf - 1 big
5. Cloves - 2

Preparation:
1. Soak the basmati rice in some water for 1/2 hour
2. Drain the rice and allow it to dry
3. In another vessel, heat the ghee, add cardamon pods, cinnamon sticks, bay leaves, star anise, cloves and fry for a minute
4. Add rice,  salt and fry for sometime till rice becomes lightly brittle
5. Add 1 cup of boiling water and cook till the water have been absorbed. Rice will be 99% cooked now. Switch off the flame and leave the rice covered for 5 minutes. It will get fully cooked from heat
6. Garnish with cilantro (optional)
Serve hot with non-veg or veg masala curries
