Kothu Poratha / Kothu Parotta

Ingredients:

1. Kerala / Malabar Poratha - 3 (chopped into bite size pieces)   Kerala/Malabar Poratha recipe
2. Onion - 1 (thinly sliced)
3. Tomato - 1 (thinly sliced)
4. Green Bell Pepper - half (cut into thin matchsticks)
5. Red Chilli powder - 1 tsp
6. Black pepper powder - 1/2 tsp
7. Turmeric powder - 1/4 tsp
8. Green chillies - 2 (cut into slits)
9. Garlic cloves - 3 (chopped)
10. Carrot - 1 (cut into thin matchsticks)
11. Salt to taste
12. Oil - 2 tbsp

Preparation:
1. Heat oil in a wok/kadai
2. Saute the onions till they turn translucent
3. Now add the garlic and green chillies and saute till garlic and onions turn golden brown color
4. Put the tomatoes, carrot and cook till tomatoes become smashy and cooked
5. Now the add the red chilli powder, pepper powder, turmeric powder, salt and cook for 1 minute
6. Put the green bell pepper and cook for 1-2 minutes
7. Now add the chopped porathas, mix well and cook for less than 5 minutes
Garnish with coriander leaves (optional)
Serve hot with raita or as such

Note: If you want to add egg, add it before adding porathas and scramble them
