Ingredients:
1. 1/2 cup oil / unsalted butter (I use canola)
2. 1 cup sugar
3. 2 eggs - beaten
4. 3 very ripe bananas - smashed (Chiquita / Robusta banana)
5. 2 cups all purpose flour (maida)
6. 1 teaspoon baking soda
7. 1/2 teaspoon baking powder
8. 1/2 teaspoon salt
9. 3 tablespoons milk
10. 1/2 teaspoon vanilla
11. 1/2 cup chopped walnuts
Method:
1. Cream the oil, sugar, eggs together
2. Add the smashed bananas
3. Sift the dry ingredients together and add slowly to the creamed mixture
4. Add the milk and vanilla
5. Fold in the chopped walnuts
6. Bake in a greased and parchment lined pan at 350 degrees for 1 1/2 hours
Insert a toothpick on the middle to check if its cooked inside
7. Cool on a rack
8. Slice to serve
