Ingredients:
1. Cabbage -Half of one medium sized (shredded)
2. Carrot - 1 or 2 (shredded)
3. Shallots / Small onions - 1/2 cup (sliced)
4. Green chilli - 3-4 (cut into slits)
5. Curry leaves - 1 sprig
6. Mustard seeds - 1/2 tsp
7. Cumin seeds - 1/2 tsp
8. Urad dal - 1/4 tsp
9. Grated coconut - 1 cup
10. Turmeric powder - A pinch
11. Oil - 2 tbsp
12. Ginger - 1 tiny piece (crushed)
13. Salt to taste
Preparation:
1. Combine the cabbage and carrot with some salt, turmeric powder, green chilli, ginger and grated coconut
2. Heat oil in a non stick pan and splutter mustard seeds, cumin seeds and urad dal
3. Add curry leaves and saute for a minute
4. Add shallots and saute till they turn translucent
5. Add the cabbage-carrot mixture and saute for 2 minutes
6. Cover the pan and cook on low flame, stirring occasionally. Do not add water while cooking cabbage.
7. After 6- 8 mins the cabbage will be cooked.
8. Remove the lid and stir fry for another 4-5 minutes so that the cabbage is crunchy and not soggy.
Serve hot with plain rice
