Pacha Payar Mezhukkupuratti / Long Beans Stir Fry

Ingredients:
1. Long beans/Pacha payar - 1/2 bunch
2. Crushed Dry Red Chilli Flakes - 1 tsp
3. Shallots/Pearl Onion - 6-8 (finely chopped)
4. Turmeric powder - 1/4 tsp
5. Curry leaves - 1 sprig
6. Salt to taste


Preparation:
1. Wash and clean the long beans. Chop them into 1 inch long pieces
2. Heat oil in a pan.
3. Add the chopped shallots and curry leaves. Saute well till shallots turn lightly brown
4. Add the turmeric powder and crushed chilli flakes. Fry until raw smell is gone
5. Now put the chopped long beans and mix well
6. Sprinkle some water and cook covered till beans get cooked
7. Open and stir fry until beans turn slightly brown
Serve hot with plain rice
