Carrot Cake

Ingredients:                                              

1. All Purpose Flour/Maida - 1 1/2 cups
2. Vegetable Oil/Canola Oil - 1/2 cup
3. Powdered Sugar - 1 1/2 cups
4. Grated Carrots - 2 cups
5. Eggs - 2
6. Baking Soda - 1 tsp
7. Baking powder - 1 tsp
8. Salt - 1/4 tsp
9. Vanilla Extract - 1 tsp
10. Walnuts/almond/pecan - 1/2 cup (chopped) - i used chopped walnuts

Preparation:
1. Preheat oven to 350 degrees C
2. In a large bowl, beat eggs and then add sugar to it slowly and mix. Now add vanilla to it and mix.
3. Add flour, baking soda, baking powder and salt to it and mix well without any lump
4. Now fold in the carrots and nut to the mixture 
5. Grease a cake bake pan with butter and flour
6. Pour the cake mix into the pan
7. Bake for 30 mins. Insert a toothpick on the middle of the cake to check if its cooked.
8. Cool on rack
