Lemon Rice

Ingredients:
1. Cooked Basmati Rice - 1 cup
2. Cumin seeds - 1/2 tsp
3. Curry leaves - 2 sprigs
4. Dry Red Chilli - 3
5. Green Chilli - 2 (cut into slits)
6. Mustard seeds - 1/2 tsp
7. Urad Dal - 1.2 tsp
8. Channa Dal - 1 tbsp
9. Lemon juice - 6-7 tbsp
10. Roasted peanuts - 3-4 tbsp
11. Turmeric powder - 1/4 tsp
12. Salt to taste
13. Oil - 1 tbsp

Preparation
1. Heat oil in a pan.
2. Splutter mustard seeds and  cumin seeds
3. Add Urad dal and Channa dal and fry till they turn slightly red
4. Put curry leaves, green chilli, red chilli and stir fry for few seconds
5. Add turmeric powder, roasted peanuts and combine. Switch of the flame
6. Add enough salt to lemon juice and combine well
7. Add the seasoning to the cooked rice and mix carefully till it coats the rice well
8. Now add the lemon juice and mix well
Serve hot wit curd, pickle & appadam or any curry of your choice
