Potato & Soya Chunks Masala Curry

Ingredients:
1. Potato - 2 (cut into cubes)
2. Soya chunks - 1 cup
3. Onion - 1 (thinly sliced)
4. Green chilli - 4 (cut into slits)
5. Grated coconut - 1/2 cup
6. Garlic - 5-6 cloves (chopped)
7. Coriander powder - 2 tsp
8. Red chilli powder - 1 tsp
9. Turmeric powder - 1/2 tsp
10. Dry Red chilli - 3
11. Cumin seeds - 1/2 tsp
12. Coriander and mint leaves - a few to garnish
13. Salt to taste
14. Oil for frying


Preparation:
1. Soak the soya chunks in hot water for sometime and squeeze away the complete water from it. Keep aside
2. Boil the potato pieces with enough water and little salt. Drain the water away and keep aside
3. In a pan, heat oil and fry the soya chunks for 4-5 minutes on medium flame and keep aside
4. In the same oil, roast the grated coconut till it turns golden brown. Now add the coriander powder, turmeric powder, chilli powder and fry for 1 minute. Remove it from heat and  keep to cool
5. Add this to blender and grind into a fine paste adding little water
6. In a pan, heat little oil, splutter the cumin seeds and dry red chilli
7. Add the onions, garlic and green chilli. Saute them well till onions turn golden brown
8. Put the soya and potato. Mix well and stir fry for 1 minute
8. Now add the paste mixture to it and mix well. If the gravy is too thick add some water and let it boil
Serve hot with any roti, chapathi or plain rice
