Vegetable Stew

Ingredients:
1. Potato - 3 (diced)
2. Carrot - 1 (diced)
3. Green peas - 1/2 cup (i used frozen, when use dry green peas soak overnight before cooking)
4. Onion - 1 (chopped)
5. Cardamon pods - 3
6. Cloves - 4
7. Cinnamon stick - 1 inch piece
8. Pepper corns - 8-10
9. Coconut milk - 2 cup
10. Oil - 1 tbsp
11. Curry leaves - 1 sprig
12. Salt to taste
13. Green chilli - 3 (chopped)

Preparation:
1. Heat oil in pan. Fry the green peas and keep aside
2. Boil the potato and carrot until they become soft. Keep aside
3. Heat oil in a pan. Fry the cardamon pods, cloves, pepper corns and cinnamon stick till aroma comes.
4. Add the chopped onions and green chilli. Saute well till onions become translucent
5. Put the potato, carrot and green peas along with coconut milk. Add salt
6. Keep to boil and add curry leaves
Serve hot with appam or bread
