Mix Veg Butter Masala / Mix Veg Makhani

Ingredients:
1. Fresh Vegetables ( 2 cups)
     French Beans, Cauliflower, Carrot, Green peas, Potato
2. Red Chilli powder - 2 tbsp
3. Butter - 5 tbsp
4. Tomato - 3 (finely chopped)
5. Cardamon - 4
6. Green  Chilli - 4 (thinly sliced length wise)
7. Ginger - 1 inch piece (thinly sliced length wise)
8. Garam Masala - A pinch
9. Fresh Cream - 1/2 cup
10. Salt to taste
11. Coriander leaves to garnish
12. Oil - 2 tbsp

Preparation:
1. Heat 2 tbsp of oil in a pan and shallow fry all the vegetables for 8-10 minutes on medium flame. Keep aside
2. Heat 3 tbsp of butter in a pan over medium heat. Put the cardamon pods and fry for a minute. Add the chopped tomatoes and cook till it get all mushy.Add little salt. Remove it to a plate and keep to cool. Blend the cooked tomatoes in a mixer. Strain it well into a bowl
3. Heat 1 tbsp of oil with 2 tbsp of butter in a pan. Add the green chilli, ginger pieces and fry them. Then add the vegetables and cook for 5 minutes
4. Add the tomato puree and cook for 6-8 minutes. Add cream and simmer further for 5 minutes
5. Turn off the flame. Add salt if required
Garnish wit coriander leaves
Serve hot with roti, naan, parotha or rice
